10 med. potatoes
1 cup vegetable oil
3-4 tablespoons red wine vinegar
1 tablespoon Dijon mustard
2 garlic cloves crushed
1/2 teaspoon each dried basil, oregano, salt
1 red onion finely chopped
2 cups thinly sliced celery
Cook unpeeled potatoes in boiling, salted water until tender.
Mix together vinegar, garlic, spices, mustard, and oil. When potatoes are cooked, peel and cut and mix together with celery and onion. Pour dressing over and mix.
